Day #196 in A Year of Thanks:
I’m thankful for my mini waffle iron.

I used to love eating Eggo waffles when I was younger. I’d eat them straight out of the toaster, extra crispy and golden brown. I’m now allergic to an ingredient that they’re made with: soy. Soy is in practically everything sold on the shelves where I live, whether it’s in the form of soy lecithin, soy flour, soybean oil, or my personal favorite, “sneaky” way food companies like to hide soybean oil is by calling it vegetable oil. I’ve had people try to argue with me that vegetable oil isn’t soybean oil, but go ahead and grab a bottle of your favorite vegetable oil and read the ingredients.

I have yet to find a brand of vegetable oil that genuinely isn’t soybean oil, but if you have one, please comment below and prove me wrong. Thankfully, my allergy isn’t too severe, and I can tolerate soy to a degree (mainly soy lecithin). If there’s something that contains all three forms of it (usually pizza), then my tongue will swell up (soy flour is an absolute no-go). Anyway, I haven’t yet figured out how to eliminate soy completely from my diet, although I will make certain foods from scratch, like waffles. With my mini waffle iron and homemade waffles, which I can use to make anything, I can enjoy my own Eggo waffles without soy.
